Ingredients

1 tablespoon oil
4 chicken thighs ( bone in and skin on )
1 tablespoon oil

1/4 preserved lemon ( pith removed , and peel rinsed and sliced )
1/4 cup kalamata olive ( chopped )
1 tablespoon harissa
1 tablespoon honey
1/4 cup parsley ( chopped )
1/4 cup cilantro ( chopped )

Instructions

1.Preheat the oven to 375°F.
2.Heat one tablespoon of oil in a skillet and brown the chicken pieces on both sides. Transfer chicken to a tagine dish.
3.In the same skillet, add another tablespoon of oil followed by onions, garlic, and ginger. Cook until onions become translucent, then add sliced nectarines and plums and cook until the fruit begins to release its juices.
4.Pour the fruit mixture over the chicken in the tagine dish. Add chicken stock, paprika, cayenne pepper, cumin, turmeric, cinnamon, saffron, salt, and pepper. Mix well and add in chopped preserved lemon, kalamata olives, harissa, and honey. Cover the dish with the tagine lid.
5.Bake the tagine in preheated oven for about 45 minutes or until the chicken is fully cooked. Garnish with chopped parsley and cilantro before serving.
