Ingredients

1 tablespoon corinader seeds
1 tablespoon cumin seed
3 tablespoons harissa ( purchased or homemade )
1 lemon , juice of
2 tablespoons extra-virgin olive oil ( Moroccan preferred )
4 garlic cloves , minced
1 -3 lb lamb shoulder , boned and butterflied
kosher salt & freshly ground black pepper
1 cup yogurt
1 cup cucumber , peeled , seeded and coarsley grated
1/4 cup mint , minced
3 tablespoons preserved lemons , minced
kosher salt & freshly ground black pepper

Instructions
