Ingredients

2 teaspoons olive oil
6 button mushrooms , sliced very thin
3 eggs
2 1/2 tablespoons white sugar
1 pinch salt and ground black pepper to taste
1/4 teaspoon red chile powder , or to taste
2 tablespoons vegetable oil , divided
1 ounce mozzarella cheese , sliced very thin

Instructions

1.In a skillet over medium heat, heat the olive oil and cook the mushrooms until tender. Set aside.
2.In a bowl, beat the eggs with sugar, salt, black pepper, and red chile powder.
3.Heat 1 tablespoon of vegetable oil in a tamagoyaki pan or a small non-stick pan over medium heat. Pour a thin layer of the egg mixture, and quickly spread it to cover the surface. When the edges start to set, roll it up to one side of the pan. Brush the empty side of the pan with vegetable oil, and pour another thin layer of the egg mixture. Add a layer of mushrooms and mozzarella cheese on one end of the rolled eggs. Roll the eggs over the filling, and cook for another minute.
4.Repeat the process until all the egg mixture is used up. Cut the tamagoyaki into slices and serve.
