1/2 - 1 preserved lemon , rinsed well in cold water and chopped finely into a small dice
2 -3 cups chicken bouillon or 2 -3 cups chicken broth
4 ounces hot water
kalamata olives or arabic olive
1 can garbanzo beans
1 -2 onion , chopped

Instructions

1.Season the chicken pieces with salt, pepper, paprika, cumin, saffron, and turmeric.
2.In a large pot or Dutch oven, heat olive oil over medium heat and cook the chicken until browned on all sides. Remove from pot and set aside.
3.In the same pot, sauté the chopped onion until softened and golden brown.
4.Add the chicken back to the pot along with garlic, preserved lemon, and hot water. Stir to combine.
5.Pour in enough chicken bouillon or broth to cover the chicken. Bring to a boil and then reduce heat to a simmer. Cover and cook until the chicken is cooked through and tender.
6.Add kalamata olives, garbanzo beans, and additional spices to taste. Stir to combine and cook for an additional 10-15 minutes.
7.Serve hot with your choice of rice, couscous, or bread.
