Ingredients

700 g chicken thigh fillets , sliced thinly
1/2 cup flat leaf parsley , chopped coarsely
4 teaspoons lemon rind , finely grated
4 teaspoons lemon juice
2 teaspoons ground turmeric
1 teaspoon ground coriander
1/4 teaspoon cayenne pepper
1 medium red onion , chopped finely
2 tablespoons olive oil
1 cup red lentil , rinsed in water
2 1/2 cups chicken stock
200 g baby spinach leaves
1/2 cup of fresh mint , coarsely chopped
1/2 cup fresh coriander , coarsely chopped ( leaves )
4 teaspoons red wine vinegar
1/3 cup yogurt
Chicken Chermoulla is a popular North African dish typically made with fish, spices, and herbs. Instructions

1.Combine chicken, parsley, lemon rind, lemon juice, turmeric, ground coriander, cayenne pepper and red onion in a medium bowl. Toss to combine and set aside.
2.Heat 1 tablespoon of olive oil in a large frying pan over high heat. Cook chicken mixture in batches until browned and cooked through, adding extra oil as required.
3.Meanwhile, place lentils and chicken stock in a medium saucepan. Bring to the boil, reduce heat to low and simmer for 12 minutes or until tender. Drain any excess liquid from lentils before combining with cooked chicken, spinach, mint, and coriander.
4.In a small bowl, whisk together red wine vinegar and yogurt. Drizzle dressing over lentil salad and serve.
