Ingredients

2 cups uncooked jasmine rice
4 cups water
4 skinless , boneless chicken thighs , cut into small pieces
1 onion , cut in half and sliced
2 cups dashi stock , made with dashi powder
1/4 cup soy sauce
3 tablespoons mirin ( Japanese rice wine )
3 tablespoons brown sugar
4 eggs
Oyakodon is a classic Japanese dish that translates to "parent and child rice bowl", as it features both chicken (parent) and egg (child). This dish is a popular comfort food in Japan that can be found in many restaurants and home kitchens. The hearty dish pairs well with rice and makes for a quick and satisfying meal.

Instructions

1.Rinse 2 cups of jasmine rice under cold water and place it in a rice cooker with 4 cups of water. Cook for about 15-20 minutes, or until the rice is fully cooked.
2.In a medium-sized saucepan, add 2 cups of dashi stock, 1/4 cup of soy sauce, 3 tablespoons of mirin, and 3 tablespoons of brown sugar. Mix well and bring to a boil.
3.Once the sauce starts to boil, add in sliced onions and chicken thighs. Let it simmer over medium-high heat for about 10-15 minutes, or until the chicken is fully cooked.
4.Crack 4 eggs into the saucepan and cover with a lid. Cook for about 2-3 minutes, or until the eggs are fully cooked.
5.Serve the chicken and egg mixture over the cooked rice and garnish with green onions, if desired.
