Ingredients

750 g kent pumpkin , peeled , deseeded , cut into 2cm pieces
1 teaspoon olive oil
1 teaspoon cumin seed
1 teaspoon ground coriander
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
500 g frozen broad beans
1 1/2 cups vegetable stock
1 1/2 cups couscous
400 g chickpeas , rinsed , drained
30 g toasted pine nuts
1/4 cup fresh lemon juice
1 cup chopped fresh coriander
skim yoghurt , to serve
Moroccan Spiced Pumpkin & Couscous Salad is a special twist to your traditional pumpkin and couscous salad. The salad combines the best of Moroccan flavors with a nutritious blend of pumpkin, couscous, and broad beans. The dish is seasoned with a mixture of spices and is easy to prepare, making it the perfect meal for busy weekdays. Instructions

1.Preheat oven to 200°C or 180°C fan-forced.
2.Line a large baking tray with baking paper.
3.Place pumpkin, oil, cumin, coriander, cinnamon, and ginger in a large bowl and toss to coat.
4.Spread evenly over the prepared tray and roast for 25 minutes or until pumpkin is tender.
5.Place broad beans in a heatproof bowl.
6.Cover with boiling water.
7.Stand for 2 minutes or until bright green and tender.
8.Drain.
9.Place stock in a medium saucepan and bring to the boil.
10.Remove from heat and stir in couscous.
11.Cover and stand for 5 minutes or until liquid has absorbed.
12.Use a fork to fluff up couscous.
13.Add chickpeas, broad beans, pine nuts, lemon juice, and chopped coriander to the couscous and stir until combined.
14.Serve warm or at room temperature with yoghurt.
