1 large sweet onion , sliced into half-rounds
2 medium zucchini , sliced into 1/4 inch thick half-rounds
1 can garbanzo beans , rinsed and drained
1 can tomatoes , diced
2 cups chicken broth , reduced sodium
1/4 - 1/2 teaspoon cayenne pepper ( optional )
1 1/2 teaspoons mild chili powder
2 teaspoons ground cumin
1 teaspoon ground cinnamon
2 teaspoons ground ginger
2 teaspoons ground coriander
1 lemon
fresh cilantro , chopped ( for garnish )
couscous , whole wheat ( or your favorite type )

Instructions

1.Season the chicken with salt and pepper.
2.In a large pot or Dutch oven, heat the olive oil over medium-high heat.
3.Add the chicken and cook until browned on both sides, approximately 5 minutes per side.
4.Remove the chicken and set aside.
5.Add the onion to the pot and cook until softened and lightly browned, approximately 5 minutes.
6.Add the zucchini and cook until lightly browned, approximately 5 minutes.
7.Add the garbanzo beans, tomatoes, chicken broth, cayenne pepper (if using), chili powder, cumin, cinnamon, ginger, and coriander to the pot and stir to combine.
8.Return the chicken to the pot and bring the mixture to a boil.
9.Reduce the heat to low, cover the pot and let simmer for 45 minutes to an hour or until the chicken is cooked through.
10.While the chicken simmers, prepare the couscous according to package instructions.
11.Serve the stewed chicken over the couscous, garnished with freshly chopped cilantro and a squeeze of lemon juice.
