1 lb pork loin , cut into 2 pieces
1 pinch ground cumin
salt & freshly ground black pepper

2 ounces soft dark brown sugar
1/2 cup balsamic vinegar
6 fresh figs , quartered
1/2 pomegranate

This pork loin dish with caramelized figs, pomegranate seeds, and pistachios is inspired by Middle Eastern cuisine. Instructions

1.Preheat the oven to 160°C/325°F.
2.Sprinkle the pork loin pieces with ground cumin, salt and freshly ground black pepper on both sides.
3.In a large frying pan, melt the butter over medium heat and cook the pork loin pieces for 2-3 minutes on each side or until nicely browned.
4.Transfer the pork loins to a baking dish and sprinkle with soft dark brown sugar.
5.Roast in the oven for 25-30 minutes until the pork is cooked through.
6.In the meantime, pour the balsamic vinegar into the same frying pan used for the pork and add the fresh figs.
7.Cook over low heat for 5-10 minutes until the figs are soft and caramelized, and remove from the heat.
8.Add the seeds of half a pomegranate and the chopped pistachio nuts, and stir well.
9.Finally, add the zest of half an orange and mix everything together.
10.Serve the pork loin with the fig and pomegranate sauce on top.
