Ingredients

1/2 cup raisins
4 tablespoons olive oil , divided
2 tablespoons butter
8 saffron threads ( See Ingredient Note )
2 teaspoons salt
1 teaspoon ginger
1 teaspoon turmeric
1/2 teaspoon allspice
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/2 teaspoon pepper , freshly ground
3 large onions
1 tablespoon sugar
2 1/3 cups reduced-sodium chicken broth , divided ( May use fish or veggie broth )
2 1/2 lbs halibut ( Or other firm white fish , skinned & cut into 2-in wide pieces )
1 tablespoon canola oil
1/2 cup sliced almonds ( or slivered )
1 cup whole wheat couscous
Fish Couscous W-Onion T'faya is a classic Moroccan dish that combines the flavors and textures of fish, couscous, caramelized onions, raisins, and almonds. Instructions

1.In a small bowl, cover the raisins with warm water and let rehydrate for 10-15 minutes.
2.In a large saucepan, heat 3 tablespoons olive oil and 2 tablespoons butter over medium heat, add the saffron threads, and stir for a few seconds.
3.Add 1 teaspoon salt, ginger, turmeric, allspice, nutmeg, cinnamon, pepper and stir for a few more seconds.
4.Add thinly sliced onions, cover, and let it cook for about 15-20 minutes, stirring occasionally, until they are caramelized and golden brown.
5.Add 1 tablespoon sugar, 1/3 cup of chicken broth, and let it cook for another 5-10 minutes, uncovered. Remove the caramelized onions from the pan and set aside.
6.Season the fish with salt and pepper, heat 1 tablespoon of canola oil and 1 tablespoon of olive oil in a frying pan over medium heat, and cook the fish on both sides for around 3-4 minutes until it is well-browned and cooked through.
7.Remove the fish from the pan, transfer to a plate and keep it warm.
8.In the same pan, add the remaining 2 cups of chicken broth and bring it to boil. Add 1 cup of couscous, 1/2 teaspoon of salt, and 1 tablespoon of olive oil, stir to combine, remove from heat, and let stand for around 5 minutes.
9.Fluff the couscous with a fork, add the caramelized onions, raisins, and almonds, then spoon it onto plates and top with fish. Serve hot!
