Ingredients

1 1/2 - 2 lbs stewing beef , cubed
2 tablespoons vegetable oil
1 pinch turmeric
1 onion , chopped
1 fresh chili pepper , seeded and chopped
1 1/2 teaspoons paprika
1 pinch cayenne pepper
1/2 teaspoon cumin
1 lb sweet potato
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh cilantro
1 tablespoon butter
salt
pepper
Beef tagine is a traditional Moroccan dish that's typically made with slow-cooked beef, vegetables, and aromatic spices. This version features succulent cubes of beef in a rich, flavorful sauce with sweet potatoes for a healthy twist. The dish is perfect for a cozy night in, or for feeding a crowd on a special occasion. The preparation takes some time, but the end result is well worth the effort. Enjoy this delicious tagine on its own, or serve it over couscous for a complete meal.

Instructions

1.Preheat your oven to 350°F (175°C).
2.In a large Dutch oven, heat up vegetable oil over medium-high heat.
3.Add the cubed beef to the pot and cook until browned, about 5-7 minutes.
4.Add the turmeric, onion, chili pepper, paprika, cayenne pepper, and cumin to the pot. Cook until fragrant, about 2-3 minutes.
5.Add enough water to just cover the beef and bring to a boil.
6.Cover the pot and transfer to the preheated oven. Cook for 1 1/2 to 2 hours, or until the beef is tender.
7.While the beef is cooking, peel and dice the sweet potatoes into bite-sized pieces.
8.In a separate pan, melt the butter and add the sweet potatoes. Cook until tender, about 15-20 minutes.
9.Once the beef is done cooking, remove from the oven and stir in the cooked sweet potatoes.
10.Serve the tagine garnished with chopped parsley and cilantro, and season with salt and pepper to taste.
