1 package dried soba noodles
1 cup prepared dashi stock
1/4 cup soy sauce
2 tablespoons mirin
1/4 teaspoon white sugar
2 tablespoons sesame seeds
1/2 cup chopped green onions
1 sheet nori ( dried seaweed ) , cut into thin strips ( optional )

Instructions

1.Boil soba noodles in a pot of water for 4-5 minutes or until they are cooked through.
2.While the noodles are cooking, prepare the dashi broth by combining the dashi stock, soy sauce, mirin, and sugar in a small saucepan. Heat until sugar is dissolved.
3.Drain the noodles in a colander under cold running water until they are cooled.
4.Place the noodles on a bamboo tray or plate and sprinkle sesame seeds on top.
5.Serve with sides of chopped green onions and nori strips and a bowl of the prepared dipping sauce on the side.
