Ingredients

1 lb ground lamb or 1 lb ground beef
1 small onion , grated
2 tablespoons chopped parsley
1 tablespoon chopped cilantro
1/2 teaspoon cumin
2 pinches cayenne
salt , to taste
fresh ground black pepper , to taste
2 tablespoons olive oil
2 medium onions , chopped
2 lbs tomatoes , chopped ( or one 2-lb can organic chopped tomatoes )
2 garlic cloves , chopped
1 bunch parsley , chopped
1 teaspoon cumin
1/2 teaspoon cinnamon
1/4 teaspoon cayenne
1 teaspoon finely-ground black pepper
6 medium eggs

Instructions

3.In a large saucepan or Dutch oven, heat the olive oil over medium heat.

5.Add the chopped tomatoes, garlic, chopped parsley, cumin, cinnamon, cayenne, and finely-ground black pepper to the pan, and stir to combine.
6.Bring the mixture to a simmer, then reduce the heat to low and let it cook for 20-30 minutes, or until the mixture has thickened and the tomatoes are completely broken down.
7.Add the meatballs to the pan, and gently stir to coat them with the sauce.
8.Cover the pan and let the meatballs cook for 20-25 minutes, or until they are fully cooked.
9.Crack the eggs into the pan, and let them cook until the whites are set but the yolks are still runny, about 5-7 minutes.
10.Serve hot, garnished with additional chopped parsley if desired.
