1/4 yellow bell pepper , chopped
1/4 red bell pepper , chopped
1/4 orange bell pepper , chopped
1/2 big tomatoes , cut into 4s
2 garlic cloves , peeled
1/4 cup fresh parsley
1/4 cup fresh cilantro
1 can diced tomatoes , do not drain
1 can chickpeas , drained and rinsed
1/2 teaspoon turmeric
1/2 teaspoon ground coriander
1/2 teaspoon ground pepper
1/4 - 1/2 teaspoon salt
1/4 teaspoon ground ginger
1/4 teaspoon ground paprika
1/8 - 1/4 teaspoon cinnamon
1/8 - 1/4 teaspoon cayenne
3 pieces salmon ( may substitute other fish )

Instructions

1.Preheat the oven to 375°F (190°C).
2.In a large dutch oven, heat up the canola oil and olive oil over medium heat.
3.Add the chopped onion and cook until translucent.
4.Next, add in the chopped bell peppers and cook for an additional 5 minutes.
5.Add the cut tomatoes, garlic, parsley, and cilantro, and stir well to combine.
6.Pour in the can of diced tomatoes, chickpeas, and all the spices, and stir well.
7.Place the fish fillets into the tagine sauce, making sure they are well coated before adding sliced tomatoes on top.
8.Cover the tagine and place in the preheated oven.
9.Bake for 20-25 minutes, or until the fish is cooked through.
10.Serve hot with fresh herbs and a side of couscous or crusty bread.
