Ingredients

1 kg eggplant
1 teaspoon cumin
1 garlic clove , crushed
3 tablespoons olive oil
1/2 lemon , juice of
salt
black pepper , freshly ground
2 -3 tablespoons chopped fresh coriander ( cilantro )
Zahluk is a traditional dish from Tunisia and Morocco consumed by people throughout the year, mainly during the summer months. The recipe is simple and easy to follow, and it can be served as a starter or as a side dish with many other foods. The eggplant's unique taste and the addition of cumin, olive oil, and fresh coriander make it a flavorful and healthy spread to have on the table.

Instructions

1.Preheat your oven to 220°C.
2.Wash and pierce the eggplant with a fork or knife.
3.Roast the eggplant on a baking tray for around 30-40 minutes or until they become soft and the skin becomes brown.
4.Allow the eggplant to cool, then cut off the stem and remove the skin.
5.In a bowl, mash the eggplant until there are no large lumps.
6.Add cumin, garlic, olive oil, lemon juice, salt, and black pepper to the mashed eggplant and whisk properly.
7.Then add chopped coriander and mix it well again.
8.Serve the spread hot or cold with bread, pita or on its own.
