1 tablespoon olive oil
1 large onions , diced or 2 cups diced onions
4 garlic cloves , minced or 4 teaspoons minced garlic
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1 can crushed tomatoes
2 cups cooked chickpeas or cans chickpeas , rinsed and drained
1 cup whole wheat couscous
1 cup pitted dates , halved
1/4 cup lemon juice
1/2 cup chopped fresh cilantro

Instructions

1.Heat olive oil in a large pan over medium heat. Add onions and garlic, and sauté until onions are translucent, about 5 minutes.
2.Add in the ground cumin, coriander, ginger, and cinnamon. Cook for 30 seconds.
3.Pour in the crushed tomatoes and chickpeas. Stir well and bring to a boil.
4.Reduce the heat and add in the whole wheat couscous. Cover and let simmer for 10-15 minutes or until the couscous is cooked through.
5.Once the couscous is cooked, add in the pitted dates, lemon juice, and chopped cilantro. Stir well and let simmer for another 5 minutes. Serve hot.
