Ingredients

4 chicken breasts , with bone
200 g yellow onions
15 g chopped ginger
15 g chopped garlic
2 tablespoons chopped fresh parsley
1 teaspoon cayenne pepper
1/2 teaspoon turmeric
1 teaspoon cracked cumin
1 teaspoon ground coriander
1/2 teaspoon freshly cracked black pepper
1/4 teaspoon cinnamon
20 ml lemon juice
1/2 teaspoon lemon , zest of
salt
200 g yukon gold potatoes
100 g baby spinach leaves
15 g ginger ( finely chopped )
50 g leeks ( finely chopped )
2 tablespoons butter
50 ml buttermilk
200 ml chicken broth
1 shallot , finely chopped
2 tablespoons cornstarch ( dissolved )
1/4 teaspoon saffron strand ( toasted and crushed )
15 ml frozen butter
Moroccan Chicken With Potatoes and Spinach With Saffron Jus is a flavorful blend of spices infused in tender chicken, potatoes, and spinach. Turmeric, cinnamon cumin, coriander, cayenne pepper, ginger, and garlic are blended with lemon juice and zest, giving it a unique aroma and a hint of acidity. Instructions

1.Preheat oven to 375 degrees F.
2.Combine all spices, lemon juice and zest, chopped garlic, chopped onion, chopped ginger and salt in a bowl.
3.Place chicken breasts in a baking dish, and rub the spice mixture into the chicken.
4.Arrange potatoes over and around the chicken.
5.In another pan, sauté leeks and frozen butter until golden brown.
6.Add the remaining spices, corn starch and chicken broth and stir for a couple of minutes.
7.Pour the sauce over the chicken and potatoes.
8.Bake for 30 minutes or until the chicken is fully cooked.
9.Melt two tablespoons of butter in a pan, add spinach and sauté for two minutes. Season with salt and pepper.
10.Toast saffron strands and crush in mortar and pestle. Add them to the cooked dish.
11.Serve chicken with potatoes, spinach and saffron jus gravy.

PROS
