Ingredients

1 tablespoon za'atar spice mix
800 g chicken thigh fillets , trimmed and halved
1 tablespoon oil
60 g butter
1 large onion , cut into wedges
1 cinnamon stick
2 garlic cloves , crushed
2 tablespoons lemon juice
1 cup chicken stock
1/2 cup pitted prune , halved
1 1/2 cups couscous

Instructions

1.Preheat oven to 170°C.
2.Rub za'atar spice mix over chicken.
3.Heat oil and half the butter in a flameproof baking dish over high heat. Add onion. Cook, stirring, for 5 minutes or until softened. Add cinnamon and garlic. Cook for 1 minute or until fragrant. Add chicken to dish. Drizzle with lemon juice. Add stock. Bring to the boil.
4.Cover. Transfer to oven. Bake for 30 minutes.
5.Uncover. Add prunes. Bake for a further 20 to 25 minutes or until chicken is cooked through.
6.Meanwhile, cook couscous following packet directions. Stand for 5 minutes. Add remaining butter. Season with salt and pepper. Fluff couscous with a fork.
7.Serve chicken with couscous.
