Ingredients

paprika , to sprinkle on the potatoes
2 small potatoes , peeled & cut into strips
3 -4 white fish fillets , boneless ( I used tilapia fillets )
1 can low-sodium tomato sauce or ( 8 ounce ) can tomato sauce
1 tablespoon olive oil
1/2 cup water
1 roma tomato , chopped
1/2 small onion , cut into thin strips
1/2 teaspoon ras el hanout spice mix ( Ras El Hanout - Moroccan Spice Mix )
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
1/3 cup green olives , cracked ( pitted , preferably )
1/2 preserved lemon , sliced with the flesh ( Moroccan Spiced Preserved Lemons )
1/4 cup fresh parsley , finely chopped
3 medium garlic cloves , minced
1 tablespoon vinegar
1/4 cup lemon juice
1 teaspoon salt
1 teaspoon paprika
1/2 teaspoon cumin
1/2 teaspoon black pepper
Fish Tagine With Olives is a popular dish in Moroccan cuisine. Tagine refers to the cooking vessel traditionally used to make the dish, but it can also be made using a Dutch oven or other oven-safe pot. Instructions

1.Preheat the oven to 375°F.
2.In a mixing bowl, mix the olive oil, lemon juice, vinegar, garlic, paprika, cumin, salt, and black pepper.
3.Add the white fish fillets to the bowl and coat them in the spice mix. Let them sit for 10 minutes.
4.Layer the strips of potatoes on the bottom of a tagine. Then add the chopped onion.
5.Pour the tomato sauce over the onions. Add the ras el hanout, salt, and cayenne pepper.
6.Place the fish fillets on top of the tomato sauce mixture. Add the green olives and sliced preserved lemon.
7.Sprinkle fresh parsley on top.
8.Cover the tagine and place it in the oven. Bake for 45-50 minutes, or until the potatoes are tender and the fish is cooked.
9.Serve hot and enjoy!
