Moroccan Lentils and Couscous is a simple yet flavorful one-pot meal that originated in North Africa. Instructions

1.Rinse and drain the lentils before placing them in a large saucepan with the garlic, cumin, salt, pepper, ground cinnamon, bay leaf, and water.
2.Bring the mixture to a boil, then reduce the heat to low, cover and simmer for 20-30 minutes or until the lentils are tender.
3.While the lentils cook, heat the vegetable oil in a large nonstick skillet over medium-high heat. Add the onions and sauté for 5 minutes or until softened.
4.Prepare the couscous according to package directions.
5.When everything is ready, plate the lentils alongside the couscous and onions. Enjoy!
