2 dozen pacific oysters , on the half shell
1 bird 's eye chili , fresh
2 tablespoons coriander , finely chopped
1 1/2 limes , juice of
1 1/2 garlic cloves , crushed
1/4 teaspoon sea salt
1/4 cup extra virgin olive oil
2 tablespoons red caviar
lime wedge , to serve

Instructions

1.In a small mixing bowl, combine garlic, chili, and coriander.
2.Add lime juice and salt and stir well.

5.Top each oyster with half a teaspoon of red caviar.
6.Broil the oysters in high heat until the caviar is golden brown.
7.Serve with a lime wedge.
