Ingredients

1/3 cup burghul wheat
2 teaspoons rice bran or 2 teaspoons olive oil
1 brown onion , finely chopped
1 tablespoon moroccan mixed spice
1 garlic clove , crushed
200 g kumara , peeled and finely grated
200 g ground lamb , lean
1/3 cup parsley , flat leaf , finely chopped
2 tablespoons mint , chopped
2 tablespoons sesame seeds , toasted
2 tablespoons tomato sauce
1 tomatoes , medium , sliced
Moroccan Meatloaf is a twist on the traditional meatloaf recipe, using Moroccan spices and kumara to give it a unique and flavorful taste. This dish is perfect for busy weeknights when you want to prepare a quick and easy meal for your family. Instructions

1.Rinse burghul under cold water and drain; cover with 1 cup hot water and soak for 15 minutes.
2.Preheat oven to 200°C.
3.Heat rice bran oil in a frying pan over medium heat and cook onion, Moroccan spice and garlic for 2-3 minutes or until onion is softened. Cool.
4.Squeeze excess water from burghul; place in a large bowl with onion mixture, kumara, lamb, parsley and mint; season and mix well.
5.Press the mixture into a lightly oiled loaf tin, sprinkle sesame seeds over the top and bake for 30-35 minutes or until cooked through and golden.
6.Cut meatloaf into thick slices, serve with tomato and rocket salad. Drizzle with tomato sauce if desired.
