Ingredients

2 medium eggplants
1 tablespoon oil
1 small onion , chopped
1 teaspoon cumin
1/2 teaspoon coriander
1/2 teaspoon curry powder
2 garlic cloves , crushed
3 teaspoons ginger , minced
1/4 teaspoon cayenne pepper
1 tablespoon tomato paste
1 tablespoon cilantro
1/4 cup plain fat-free yogurt
1/2 lemon , juice of

Instructions

1.Preheat the oven to 375°F (190°C).
2.Cut the eggplants in half and brush on all sides with oil.
3.Place the eggplants cut-side down on a baking sheet and bake for 40-50 minutes, or until the flesh is very tender and the skin is lightly browned.
4.While the eggplants are baking, heat a skillet over medium heat and add the onion, cumin, coriander, curry powder, garlic, ginger, and cayenne pepper.

6.Remove the eggplants from the oven and let them cool slightly.
7.Scoop out the flesh and discard the skin.
8.Add the eggplant flesh, cooked onion and spices, tomato paste, cilantro, yogurt, and lemon juice to a food processor and pulse until the dip is smooth and creamy.
9.Taste and adjust seasoning as needed.
10.Serve the dip immediately with crackers, pita chips, or vegetable sticks.
