Ingredients

1 lb baby carrots

1/4 cup minced fresh parsley leaves
1 cup raisins
1 leaf lettuce ( optional )

Instructions

1.Boil the baby carrots in salted water until they are tender. Drain the water and let the carrots cool for some time.

3.Gradually add the olive oil while whisking the mixture until it thickens.
4.Add the minced parsley to the mixture and continue whisking.
5.Add the raisins to the bowl of cooled baby carrots. Gently mix the carrots and raisins together.
6.Pour the whisked dressing over the carrot-raisin mix and toss it gently to combine well.
