Ingredients

1/4 cup lemon juice
2 tablespoons nonfat plain yogurt

2/3 cup prepared salad dressing , divided ( Moroccan-Spiced Lemon Dressing )
1 cup cherry tomatoes or 1 cup grape tomatoes , halved
1 small red onion , chopped
8 cups Baby Spinach
1/4 cup sliced almonds , toasted ( see Tip )
This Moroccan-Spiced Lemon Dressing and Quinoa-Apricot-Spinach Salad is a delicious and healthy way to enjoy a light yet satisfying meal. Instructions

1.To make the dressing, whisk together the lemon juice, yogurt, honey, cumin, cinnamon, ginger, olive oil, salt, and pepper in a small bowl.
2.Rinse the quinoa under cold water and drain.
3.Heat 2 teaspoons of olive oil in a medium saucepan over medium heat.
4.Add the garlic and sauté for 30 seconds.
5.Add the quinoa, apricots, water, and salt, and bring to a boil.
6.Reduce the heat and simmer, covered, for 15 minutes, or until the quinoa is tender and the water is absorbed.
7.Fluff the quinoa with a fork and transfer it to a large bowl.
8.Toss the quinoa with ⅓ cup of the dressing, tomatoes, onion, spinach, and almonds.
9.Serve with the remaining dressing on the side.
