Ingredients

36 spring roll wrappers ( I use the large square ones in a green pack )
5 cups ground chicken
3 large brown onions , finely chopped
1/3 cup fresh cilantro , finely chopped
1/4 preserved lemon , skin only
1/2 teaspoon ras el hanout spice mix
1/4 teaspoon schwartz Season-All salt
3 -4 hard-boiled eggs , finely chopped
2 tablespoons olive oil
6 tablespoons plain flour
1/2 cup water

Instructions

1.In a large bowl, mix together ground chicken, chopped brown onions, cilantro, preserved lemon skin, ras el hanout spice mix, and schwartz Season-All salt.
2.Finely chop the hard-boiled eggs and add them to the chicken mixture.
3.In a separate bowl, mix the plain flour and water together to form a paste.
4.Lay out one spring roll wrapper and spoon 1-2 tablespoons of the chicken mixture onto the center. Fold the bottom corner over the chicken, then fold in the sides, and finally, roll up the wrapper until the filling is completely enclosed.
5.Brush the edges of the wrapper with the flour paste and press to seal. Repeat with remaining wrappers and filling.
6.Heat olive oil in a deep frying pan over medium-high heat. Fry the bourek until golden brown and crispy, turning occasionally, for 3-4 minutes. Transfer to a paper-lined platter to drain the oil.
