B'sarra is a popular soup in Morocco, especially during Ramadan when it's used to break the fast. The soup is made with dried fava beans that are cooked with spices like cumin and paprika and then pureed until smooth. Argan oil, which is native to Morocco, is used as a garnish to add flavor and healthy fats. Harissa, a spicy and smoky chili paste, is also used to give the soup a nice kick. Overall, B'sarra is a healthy and filling soup that is perfect for a cozy night in or shared with friends and family.

Instructions

1.Drain and rinse the soaked fava beans.
2.In a large pot, combine the beans, water, garlic, onion, olive oil, salt, cumin, and sweet paprika.
3.Bring the mixture to a boil over high heat, stirring occasionally.
4.Reduce the heat to medium-low and let the soup simmer, covered, for 1 to 1 1/2 hours or until the beans are tender.
5.Once the soup is cooked, use a blender or immersion blender to puree the soup until smooth.
6.Serve the soup in bowls, drizzled with argan oil and topped with harissa, a squeeze of lemon, and a side of Arabic bread.
