Ingredients

1/2 cup soy sauce
1/2 cup sake ( Japanese rice wine )
1 tablespoon white sugar
1 tablespoon chopped fresh ginger
1 1/2 pounds skinless , boneless chicken breasts , cut into 24 cubes
4 green onions , cut into 2-inch pieces
8 wooden skewers , soaked in cold water for 2 hours

Instructions

1.Combine the soy sauce, sake, sugar, and ginger in a small saucepan over low heat. Cook for 3–4 minutes, until the sugar dissolves.
2.Thread one piece of chicken and one piece of green onion onto each skewer. Repeat until all 8 skewers are filled.
3.Brush each skewer with the soy sauce mixture, reserving some for later.
4.Preheat your grill or broiler to high heat. Grill or broil the skewers, turning occasionally and basting with the remaining soy sauce mixture, for 6-7 minutes, or until the chicken is fully cooked.
