Ingredients

2 cups dried garbanzo beans ( about 1 lb . )
cold water
salt
1 onion , peeled and quartered
1 bay leaf
1 roasting chickens
2 garlic cloves , crushed
1 teaspoon ground ginger
1/4 teaspoon black pepper
1/2 cup chopped onion
1 teaspoon turmeric
2 tablespoons chopped parsley
1 cinnamon sticks
2 tablespoons butter or 2 tablespoons margarine
1 can condensed chicken broth
1 cup sliced onion
1/2 cup raisins

Instructions

1.Soak garbanzo beans overnight, drain and rinse in the morning and cook for about 1-2 hours until tender.
2.Rub the chicken with crushed garlic, ginger, black pepper and turmeric.
3.Melt butter in a tagine or saucepan and brown the chicken for about 5-7 minutes.
4.Add onions, cinnamon sticks and cook for 5-7 minutes until the onions are golden brown.
5.Pour in the canned chicken broth, reduce the heat and cover the tagine. Allow to cook for 30 minutes
6.Remove the chicken and stir in the cooked garbanzo beans. Add raisins and continue simmering for about 20 minutes.
7.Return the chicken to the tagine and sprinkle with chopped parsley. Let it simmer for 5 minutes before serving.
