500 g sweet potatoes or 500 g kumara
2 red Spanish onions , peeled cut into wedges
1 red capsicum , cut into pieces
1 green capsicum , cut into pieces
2 zucchini , chopped
olive oil
400 g drained chickpeas
2 cups couscous , cooked

Instructions

1.Preheat oven to 200C.
2.Cut sweet potato/kumara into small pieces and put into a roasting dish with the onion wedges, capsicums and zucchini. Drizzle with olive oil.
3.Roast for 25 minutes, or till veg starts to brown.
4.Add drained chickpeas to the vegetables and return the roasting dish to the oven. Roast for another 10 minutes.
5.Take out the roasting dish from the oven and let it cool for 10 minutes.
6.In a large bowl, combine couscous and dressing and stir until well mixed. Then, add the vegetable mixture into the bowl and mix well.
7.Drizzle tahini sauce over couscous and vegetables and stir to combine.
8.Serve immediately and enjoy the taste of the delicious dish.
