Ingredients

1 pint boiling water
1 lb strongly scented freshly picked red rose petal
1 lb caster sugar
2 limes , juice of
2 lemons , juice of
2 -3 drops rose water , 2-3 drops ( optional )

Instructions

1.In a large bowl, pour the boiling water over the rose petals and cover for 24 hours.
2.Strain the mixture through cheesecloth to remove the petals, squeezing out any excess liquid.

4.Cook over medium heat, stirring frequently, until the sugar has dissolved.
5.Increase the heat to high and bring the mixture to a boil, stirring constantly.
6.Reduce the heat and let simmer for 30 minutes, stirring occasionally and skimming off any foam that forms.
7.Remove from heat and let cool for a few minutes.
8.Stir in the rose water.
9.Pour the jam into sterilized jars and let cool to room temperature before storing.
