1 package dry active yeast
1 teaspoon sugar
1/3 cup warm water
2 cups all-purpose flour
1 cup fine semolina ( yellow not white )
1 teaspoon salt
2 eggs
1 cup water
1 cup milk
canola oil
2 tablespoons butter
4 tablespoons honey , good quality
1/4 cup water

Instructions

1.In a small bowl, dissolve the yeast and sugar in warm water.
2.In a large bowl, whisk together the flour, semolina, and salt.
3.In a separate bowl, beat the eggs and then mix in 1 cup of water, milk, and the yeast mixture. Whisk well.
4.Add the wet ingredients into the flour mixture and whisk until smooth and without lumps. Let it rest for 20 minutes.
5.Heat a non-stick frying pan over medium heat. Grease the pan with canola oil. Remove excess oil.
6.Pour a ladle of the batter onto the pan and cook until the bubbles appear on the surface. Flip the pancake and cook the other side for about 20 seconds.
7.Before serving, melt the butter in a small saucepan over low heat. Mix the honey with 1/4 cup of water and heat in another small saucepan over low heat for about 2 minutes.
8.Drizzle the honey mixture and melted butter on top of the pancakes. Serve warm.
