Ingredients

1 roasting chicken ( cut up and skin removed )
2 cups artichoke hearts ( I use those packed in oil and wash oil off )
1 1/2 cups sun-dried tomatoes ( I use those packed in oil and wash oil off )
1 yellow onion
3 tablespoons capers
3/4 - 1 cup water
3 tablespoons extra virgin olive oil
1 pinch saffron thread
3/4 tablespoon cumin
1/4 tablespoon paprika
1/4 tablespoon coriander
salt and pepper

Instructions

1.Heat the olive oil in a large tagine over medium-high heat.

4.Add the artichoke hearts, sun-dried tomatoes, capers, and spices to the tagine. Stir well to combine.
5.Pour in enough water to cover the bottom of the tagine by about 1 inch. Add the saffron threads and stir well.
6.Return the chicken to the tagine, nestling it down into the vegetables.
7.Cover the tagine and cook over low heat for 1-2 hours, until the chicken is cooked through and tender.
8.Serve hot with steamed rice or couscous.
