Ingredients

1 cup sweet potatoes or 1 cup yam
1 cup sliced chard leaves ( I prefer rainbow but any dark green will do )
1/3 cup mushroom
1/4 cup molasses
1 1/2 tablespoons peanut butter
1 small chopped onion
4 large garlic cloves
2 tablespoons balsamic vinegar
3 tablespoons water
1 bay leaf
cumin
cinnamon
cayenne

Instructions

1.Peel and slice the sweet potatoes or yam into small pieces and set aside.

4.Add the sliced chard and sliced sweet potatoes or yam to the skillet. Cook for 5-7 minutes until the sweet potatoes or yam are fork-tender.
5.In a small bowl, whisk together the balsamic vinegar, water, molasses and peanut butter.
6.Pour the mixture into the skillet and stir until everything is well mixed.
7.Reduce the heat and let it simmer for a minute or two. Remove the bay leaf and serve hot.
