Ingredients

2 lbs boneless skinless chicken thighs
salt & fresh ground pepper
2 tablespoons vegetable oil
1 onion , minced
2 teaspoons garam masala
4 garlic cloves , minced
2 tablespoons unbleached all-purpose flour
1 cup low sodium chicken broth
1 can diced tomatoes
1/2 cup dried apricot , quartered
1 can chickpeas , rinsed
2 tablespoons minced fresh cilantro
Tagine is a popular North African dish that's traditionally cooked in an earthenware pot with a conical lid, called a Tagine. In this version, the dish is adapted to be made in one pan on the stovetop, without sacrificing any of the flavors or aromas that make Tagine so special. Garam masala is a blend of Indian spices that adds warmth and depth to this dish. The apricots add a touch of sweetness, while the chickpeas provide a chewy texture. Top with fresh cilantro for a pop of green and a burst of fresh flavor.

Instructions

1.Season chicken thighs with salt and pepper.
2.In a large skillet over medium-high heat, heat vegetable oil. Cook chicken until browned on both sides, around 6-7 minutes, then set aside.
3.In the same skillet, add onion and cook until translucent, around 2-3 minutes. Add garlic and garam masala and cook until fragrant, around 30 seconds.
4.Stir in the flour until thoroughly combined. Gradually pour in chicken broth and stir constantly to avoid any lumps. Add diced tomatoes, apricots, and chickpeas. Bring to a simmer.
5.Return chicken to the skillet, bring the mixture to a boil, then reduce heat and let simmer uncovered for around 15 minutes until the chicken is fully cooked through and the sauce has thickened.
6.Sprinkle with cilantro before serving.
