2 cups water
1 cup basmati rice
1 teaspoon salt
1/4 cup white wine vinegar
2 teaspoons grated orange rind
1/4 cup orange juice
1 1/2 tablespoons olive oil

3 seedless oranges
1/2 cup pomegranate seeds
1/4 cup toasted pine nuts
3 tablespoons chopped parsley

Instructions

1.Rinse the rice and transfer it to a saucepan with 2 cups of water and salt. Bring to a boil and reduce heat to low.
2.Cover the pot and let the rice cook until tender and the water has been absorbed (around 18-20 minutes).
3.In a mixing bowl, stir together the white wine vinegar, orange rind, and juice, olive oil, and pepper.
4.Peel oranges and use a sharp knife to remove their pith. Cut them into bite-size pieces and add them to the mixing bowl.
5.Add the pomegranate seeds, toasted pine nuts and chopped parsley to the mixing bowl and stir well.
6.Toss in the cooked rice and mix everything together gently.
