Ingredients

1 medium onion , pureed
5 medium tomatoes , peeled and pureed
2 tablespoons parsley
2 tablespoons cilantro
4 tablespoons celery
1 cup chickpeas , soaked overnight
1 cup lentils , soaked overnight
5 5 chicken livers or 5 chicken gizzards
4 chicken bouillon cubes or 4 beef bouillon cubes , depending on what type of meat you used
1 tablespoon butter
1 - 1 1/2 liter water
1/2 tablespoon black pepper
1/2 tablespoon ginger
1 cinnamon stick
1/2 tablespoon turmeric
6 ounces tomato paste
1 cup vermicelli , you can also do 1/2 cup Vermicelli Pasta and 1/2 cup rice
salt and pepper
Moroccan Harira Soup is a traditional soup that's often served during Ramadan in Morocco. It's a warming and filling soup that's perfect for cold nights or when you need a comforting meal. This soup is full of warm spices like ginger, cinnamon, and turmeric, which not only add flavor but also have healing properties. The addition of parsley, cilantro, and tomato paste adds freshness and tang to the soup, balancing out the warm spices. This soup is best enjoyed with fresh crusty bread for dipping and sopping up all the delicious broth.

Instructions

1.In a large soup pot, melt the butter over medium heat.
2.Add the onion puree, celery, and chicken livers/gizzards.
3.Stir in the tomato puree, chickpeas, lentils, chicken/beef bouillon cubes, black pepper, ginger, cinnamon stick, and turmeric. Add enough water to fully cover the ingredients and bring to a boil.
4.Reduce the heat to low and let simmer for 45-60 minutes, or until the chickpeas and lentils are tender.
5.Once the soup is cooked through, remove the cinnamon stick and chicken livers/gizzards and set aside.
6.Use an immersion blender or transfer the soup to a blender and puree until smooth.
7.Return the soup to the pot and add in the chopped parsley, cilantro, and tomato paste.
8.Add the cooked chicken livers/gizzards back to the soup, along with the vermicelli and rice (if using).
9.Let the soup simmer for an additional 10-15 minutes, or until the vermicelli and rice are cooked through.
10.Season to taste with salt and pepper. Serve hot with fresh crusty bread for dipping.
