Ingredients

1 small onion , finely chopped
1 tablespoon olive oil
1 pinch salt
3/4 teaspoon ground cumin
1/2 teaspoon ground ginger
1/2 teaspoon turmeric
1/2 teaspoon black pepper
1/4 teaspoon ground coriander
1 1/4 lbs chicken thighs , with skin and bones
3/4 cup chicken broth
1/2 cup water
1 cinnamon stick
1/4 sliced almonds , toasted , cooled and coarsely chopped
2 large eggs , lightly beaten
1/2 cup unsalted butter , melted
8 phyllo pastry sheets , thawed
1 teaspoon ground cinnamon
2 teaspoons brown mustard seeds

Instructions

1.Preheat the oven to 375°F.
2.In a large saucepan, sauté the onion in olive oil over medium heat for 5 minutes.
3.Add the salt, cumin, ginger, turmeric, black pepper, and coriander to the saucepan and stir for 1 minute.
4.Add chicken thighs, chicken broth, water, and cinnamon stick to the saucepan and bring the mixture to a simmer. Cover and cook for 30 minutes.
5.Remove the chicken from the saucepan and shred the meat into small pieces.
6.Add the toasted almonds, beaten eggs, and melted butter to the saucepan and mix well.
7.Place one sheet of phyllo pastry on a clean work surface and brush it with melted butter. Repeat with 3 more phyllo pastry sheets.
8.Cut the stacks of phyllo pastry sheets into 4-inch-wide strips.
9.Place 1 tablespoon of the chicken filling at one end of each strip and fold the pastry over the filling in a triangle shape, continuing to fold the strip over itself to form a triangle-shaped bundle. Repeat until all the filling is used up.
10.Place the bundles on a baking sheet and brush with melted butter. Mix the ground cinnamon and mustard seeds together and sprinkle over the bundles. Bake for 20-25 minutes or until golden brown.
