Ingredients

1 large preserved lemon , divided
1/2 large onion
4 medium garlic cloves
1 teaspoon ground cumin
1 1/2 teaspoons ras el hanout spice mix
2 tablespoons olive oil
1 tablespoon fresh cilantro
3 lamb shanks , about 4 to 5 pounds ( Beef can be substituted )
salt & pepper
1 pinch saffron thread
1 -2 teaspoon smen ( Ghee can be substituted )
2 large potatoes , peeled & cut into wedges
1 cup water
Tagine is a North African dish named after the earthenware pot that it is traditionally cooked in. This recipe combines succulent lamb shanks with potatoes, preserved lemon, and warming spices like cumin and saffron to create a rich and flavorful stew that is perfect for a cozy night in. The long cook time ensures that the meat is melt-in-your-mouth tender and infused with the aromatic flavors of the spices. Instructions

1.Cut half of the preserved lemon into thin slices and set aside. Finely chop the remaining half and set aside.
2.In a large, heavy-bottomed pot or Dutch oven, heat the olive oil over medium-high heat. Add the onion, garlic, cumin, and ras el hanout and sauté until the onion is softened and lightly browned, about 5 minutes.
3.Add the lamb shanks to the pot and season with a generous pinch of salt and pepper. Sear the meat on all sides until well browned, about 5 minutes per side.
4.Add the chopped preserved lemon, cilantro, saffron, smen, and enough water to cover the lamb. Bring to a simmer over medium heat and reduce the heat to low. Cover and cook for 2 hours, stirring occasionally.
5.Add the potato wedges to the pot and continue to cook, covered, for another 45 minutes to an hour, or until the meat is tender and falling off the bone. Stir occasionally and add more water if necessary to keep the lamb covered with liquid.
6.To serve, garnish the tagine with the sliced preserved lemon and additional cilantro, if desired. Serve hot with crusty bread or couscous, if desired.
