Ingredients

1 broiler-fryer chicken , cut into serving sizes
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon pepper
1 can low sodium chicken broth , divided
2 cups chopped onions
4 garlic cloves , minced
1 small jalapeno pepper , minced ( I used 2 )
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1 1/2 lbs butternut squash , peeled , seeded and cut into 1 inch chunks
1/3 cup chopped dried apricot
1/3 cup minced fresh parsley , divided
1/4 cup sliced almonds

Instructions

1.In a large tagine pot or Dutch oven, heat the olive oil over medium-high heat.
2.Season the chicken with salt and pepper and cook until golden brown on both sides, then remove from the pot and set aside.
3.Add onions, garlic, and jalapeno pepper to the pot and cook until softened, stirring occasionally.
4.Stir in cinnamon and ginger, then return the chicken to the pot along with half of the chicken broth.
5.Bring to a boil, then reduce the heat to low and cover. Simmer for 30 minutes.
6.Add the butternut squash, apricots, remaining chicken broth, and half of the parsley, and bring to a boil again.
7.Reduce heat to low and cover. Simmer for another 20-30 minutes, or until the squash is tender and the chicken is cooked through.
8.Serve hot, garnished with sliced almonds and the remaining parsley.
