Ingredients

1 head garlic
2 teaspoons caraway seeds

Instructions

1.Remove the stems and seeds from the dried guajillo chilies or new mexico peppers. Clean them and place them in a bowl.
2.Remove the outer paper of the garlic and slice the tip off of the head. Drizzle with olive oil and wrap in aluminum foil. Bake at 375°F for approximately 30 minutes or until the garlic is golden brown and soft.
3.In a dry pan, toast the caraway seeds, coriander seeds, and cumin seed for about 5 minutes, until fragrant. Remove from heat and grind them in a mortar and pestle or with a spice grinder.
4.In a food processor, add the dried chilies, toasted spices, dried mint, salt and roasted garlic with olive oil. Add a squeeze of Mexican lime. Pulse until a thick paste is formed.
5.Taste the harissa and adjust the seasoning to your liking.
