Ingredients

2 1/2 cups dried cannellini beans ( soaked overnight in plenty of water with 1/2 teaspoon baking soda )
1 pinch saffron thread ( a generous pinch , crushed )
5 tablespoons unsalted butter
3 medium onions , thinly slices
1/4 cup flat leaf parsley , finely chopped
1 teaspoon white pepper
1/8 teaspoon salt , to taste

Instructions

1.In a saucepan, bring the soaked cannellini beans and water to a boil. Reduce heat and simmer until beans are almost tender, around 1 hour.
2.Add butter, onions, saffron, white pepper, and salt and cook until the onions are tender, stirring occasionally, around 45 minutes.
3.Stir in the parsley and continue cooking for an additional 15 minutes. If the dish becomes too thick, add more water as required.
4.Serve warm.
