Ingredients

1 whole chicken , cut into serving-sized pieces
1 lemon
250 ml palm oil ( or groundnut oil with 2 tsp paprika )
3 onions , chopped
2 garlic cloves , minced
1 scotch bonnet pepper ( or other chilli pepper , left whole and removed after cooking for a mild dish , or chopped , seeds remo )
3 tomatoes , quartered
1 butternut squash ( or sweet pupmkin de-seeded , peeled and cut into bite-sized pieces )
20 okra ( small , tender , washed and 'topped and tailed ' )
1 ml salt ( to taste )
Muamba de Galinha, also known as chicken muamba, is a traditional Angolan dish that has been enjoyed for generations. Instructions

1.Juice the lemon and rub the chicken pieces with the juice. Set aside for 10 minutes.
2.Heat the oil in a large pot over medium heat and fry the chicken until browned on all sides. Remove the chicken and set aside.
3.In the same pot, add the onions, garlic, and scotch bonnet pepper. Fry until the onions are softened.
4.Add the tomatoes and butternut squash. Stir to combine. Add enough water to cover the vegetables and bring to a boil. Reduce heat and simmer for 25 minutes.
5.Add the okra and chicken to the pot. Simmer until the chicken is cooked through and the vegetables are tender. Season with salt to taste.
