Ingredients

2 lbs beef , cut into 1 inch cubes
2 small onions , chopped
12 ounces vegetables
1 teaspoon saffron
1 teaspoon ras el hanout spice mix
1 teaspoon garlic , minced
1 tablespoon ginger , minced
salt
pepper
2 tablespoons olive oil
1 tablespoon butter
2 tablespoons sesame seeds ( optional )
1/2 lb pitted prune

Instructions

1.In a large mixing bowl, combine cubed beef, saffron, ras el hanout spice mix, garlic, ginger, salt and pepper. Mix well to coat the beef.
2.Heat olive oil in a large dutch oven over medium-high heat. Add the beef cubes and cook until browned on all sides, about 5 minutes.
3.Remove the beef from the pan and add the onions. Cook until softened, about 3 minutes.
4.Add the vegetables, butter, sesame seeds and pitted prunes to the dutch oven. Return the beef to the pot and add 1 cup of water.
5.Bring the mixture to a boil, then reduce heat and simmer for 1 1/2 to 2 hours, or until the beef is tender and the vegetables are cooked through. Serve hot with couscous or rice.
