Ingredients

1 bunch collard greens
1/2 lb stewing beef , chopped
1/2 cup peanuts , shelled and roasted
1/2 onion , sliced in thin wedges
1/2 teaspoon ginger paste
1/2 teaspoon garlic paste
1/4 tablespoon chopped celery
1/4 tablespoon parsley
1/2 bouillon cube
black pepper , to taste
vegetable oil
N'dole is a Cameroonian dish made from collard greens and peanuts. It's a staple dish of the Douala region in Cameroon. This dish is rich in African flavors and is perfect for those who crave the complex and earthy taste of African cuisine. Instructions

1.In a pot, sauté onions in vegetable oil until softened.
2.Add beef and cook until browned.
3.Add ginger and garlic paste and black pepper. Stir for 2 minutes.
4.Add enough water to cover all the meat, and add the bouillon cube. Cover and cook for 45 minutes.
5.Wash, slice, and cook the collard greens with the chopped celery and parsley for 15-20 minutes until tender.
6.Add the roasted peanuts and cooked collard greens to the meat.
7.Cook on low heat for additional 10 minutes. Serve hot with rice or fufu.
