Ingredients

1 1/2 cups of coarse semolina
1 cup plain flour
2 teaspoons baking powder
3/4 cup unsweetened dried shredded coconut
1/4 cup granulated sugar
1 cup sunflower oil
1 lemon , zest of ( finely grated )
1 cup yogurt
4 eggs
2 teaspoons vanilla flavoring
3 cups water
3 cups granulated sugar
1 tablespoon orange flower water ( add a little more if you like it very fragrant )
1 teaspoon lemon juice
blanched whole almond
Algerian Basboussa is a unique and fragrant cake made from semolina, yogurt, and coconut, and sweetened with an orange blossom-infused syrup. This dessert is commonly served at special occasions such as weddings and Eid al-Fitr celebrations, but it can also be enjoyed as a sweet treat any time of the year. Instructions

1.Preheat the oven to 400°F (205°C).
2.In a large mixing bowl, combine the semolina, flour, baking powder, dried coconut, and granulated sugar.
3.In a separate bowl, whisk together the sunflower oil, lemon zest, yogurt, eggs, and vanilla flavoring.
4.Pour the wet ingredients into the large mixing bowl of dry ingredients and stir until just combined.
5.Pour the batter into a greased baking dish and smooth out the top.
6.Bake the cake for 30-40 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
7.While the cake is baking, prepare the syrup by combining the water, granulated sugar, orange flower water, and lemon juice in a small saucepan.
8.Bring the syrup to a boil over medium heat, then reduce the heat and let it simmer for 10-15 minutes, or until it has thickened slightly.
9.When the cake is done baking, remove it from the oven and immediately pour the hot syrup over it.
10.Let the cake cool completely in the pan before cutting it into squares. Serve with blanched whole almonds on top.
