Instructions

1.Melt the butter in a large pot on medium heat.
2.Add the butternut squash, salt, and pepper to the pot and cook for 5-7 minutes, stirring occasionally.
3.Add the water, heavy cream, milk, sugar, ginger, nutmeg, cinnamon, and coriander to the pot.
4.Simmer for 20-25 minutes, or until the butternut squash is very tender and the liquid has thickened.
