Instructions

1.In a large pot, heat oil over high heat and stir in onions, red bell peppers and jalapeno peppers.

3.Sprinkle curry powder over the chicken and vegetables, cooking for 2-3 additional minutes.
4.Gradually add chicken stock to the pot, and bring to a boil. Immediately reduce heat to medium-low, cover, and simmer for 30 minutes.
5.Add potatoes, tomatoes, and coconut milk to the pot.
6.In a separate pan, melt butter and then slowly whisk in flour. Cook for one minute while stirring constantly while adding this mixture to the soup.
7.Cook for an additional 5-10 minutes until the soup is fully heated and the potatoes are tender.
8.Season with salt, pepper and cayenne pepper to taste and garnish with chopped cilantro.
