Ingredients

1/4 ounce active dry yeast
1 teaspoon sugar
3 cups unbleached flour
1 1/2 cups barley flour or 1 1/2 cups whole wheat flour
2 teaspoons salt
1/2 cup lukewarm milk
2 teaspoons sesame seeds ( optional ) or 2 teaspoons cumin seeds ( optional )
1/2 lb ground lamb or 1/2 lb ground beef , do not use lean meat
3 tablespoons onions , grated
2 tablespoons fresh Italian parsley , chopped
1 dried hot red chili pepper , finely chopped
1 teaspoon sweet red pepper
1/2 teaspoon cumin
1/2 teaspoon salt
Moroccan Bread Stuffed With Meat, also known as Khobz bi Lahma or Loubia is a traditional Moroccan dish that is typically served with vegetables. Instructions

1.In a large bowl, dissolve yeast and sugar in 1/4 cup warm water. Let stand until frothy, about 10 minutes.
2.In another bowl, stir together the flour, barley flour, and salt. Gradually add the flour mixture to the yeast mixture.
3.Add the milk, mixing with your hands, to form a dough.
4.Knead the dough on a floured surface until smooth and elastic, about 10 minutes.
5.Transfer the dough to a greased bowl and cover it with plastic wrap. Let it rise until doubled in size, approximately 1 hour.
6.Meanwhile, cook the ground lamb or ground beef in a large skillet over medium-high heat until browned. Drain any excess fat.
7.Add the onions, parsley, red chili pepper, sweet red pepper, cumin and salt, stirring until the onions are translucent.
8.Divide the dough into 4 pieces. Roll each piece into a circle and place a heaping tablespoon of the lamb mixture in the center.
9.Pinch the edges of the dough together over the filling to form a ball. Press down to form a disk and place on a baking sheet.
10.Sprinkle the sesame seeds or cumin seeds over the top of each disk, if desired.
11.Bake at 375°F for 25-30 minutes, until golden brown.
