Ingredients

2/3 cup sugar
1 1/4 cups water
1 tablespoon lemon juice
1 tablespoon orange flower water
1 1/2 cups blanched almonds , lightly toasted and ground
1 1/2 teaspoons finely grated orange peel
1 1/2 teaspoons ground cinnamon
4 ounces phyllo pastry
2 tablespoons olive oil , for brushing
lightly toasted sesame seeds , for sprinkling
Samsa, or the North African version of samosas, is usually a triangular, savory pastry. These Tunisian versions are a twist on the original recipes and are made with phyllo pastry instead of the traditional dough. The sweet, nutty Samsa is an excellent teatime snack or a quick breakfast. The recipe is simple and quick, making it perfect for impromptu dinner parties or weekend breakfasts.

Instructions

1.Preheat the oven to 350°F.
2.In a saucepan, bring the sugar and water to a boil over medium heat, stirring until the sugar dissolves. Add the lemon juice and orange flower water, then remove from heat and let it cool.
3.Mix the almonds, orange peel, and cinnamon in a bowl. Take a spring roll wrapper and brush it with olive oil before laying a second layer of the wrapper on top of it. Cut the layered sheets of pastry into 4 segments that can accommodate around two tablespoons of the almond filling. Roll the filling in a triangular shape before keeping it onto a tray.
4.Sprinkle some sesame seeds over the pastry before baking it for 15 minutes.
5.Remove from the oven and let it cool for a minute before serving.
